Our Diabetic Friendly Pumpkin Peanut Butter Swirl Popsicles are the perfect snack to take on the go. Not only are they low in calorie, but also low in carbs. Our Type 2 Diabetics are able to fully enjoy our popsicles as a one carb option. Due to the popsicle form, slow consumption can help with blood sugar spikes. The body will not be in such a shock allowing insulin to be slowly secreted instead.
Diabetic Friendly Pumpkin
Peanut Butter Swirl Popsicles
Ingredients:
2 1/2 c soy milk
2 tbsp cornstarch
1 c and 2 tbsp coconut milk
1 ¾ c pumpkin puree
1 c Splenda
¼ c Brown Sugar Splenda
1 ½ tsp cinnamon
½ tsp ground nutmeg
1 ½ tsp vanilla extract
½ c Betsy’s Best Peanut Butter
Preparation Time: 20 minutes (plus chilling)

At this point of the recipe research and development, we have our recipe finalized but are working on the final presentation of our product. Instead of serving the ice cream immediately as a soft serve, we used popsicle molds to be served later.
Why did we choose to use a mold?
There are several reasons as to why the popsicle form is better than our soft serve. First off, it prolongs the life of the product. The popsicle can sit in the freezer however long the consumer prefers. The soft serve has to be eaten immediately after it is made due to it melting so quickly. We were also able to incorporate more of Betsy's Best Peanut Butter into the popsicle using thin layers between the pumpkin base.
Another positive to using the molds is that it is more convenient for the consumers. By reducing steps and pricy materials (such as an ice cream maker) the consumer is able to save money and time. After boiling the slurry and mixing the ice cream base, all that is left is to combine the two and pour into the molds. We chose not to put the mixer in the ice cream maker to reduce preparation time and to ease pouring of the mixture into the molds.
