 With all the hard work, Team DiaBEATes won the competition!



The day of the judging was a stressful day. It all came down to this. We prepared our pumpkin base mix the day before to save time and relieve some stress we would have in the time crunch before the judging. Working with ice cream and a popsicle that can melt easily evolves around timing. When Betsy arrived we started dipping our popsicles in warm water to finally plate.

The judging process was as expected. We were asked why we chose our recipe and how it relates to our disease. We also explained why we had two different choices, the soft serve and the popsicle. At room temperature, the flavors are enhanced.

I was very pleased with the final result of our product. The taste was consistent with what it had been the previous weeks. To my surprise, only one judge took a bite of our popsicle, the item we were featuring. Looking around at the other groups, their presentation was very well put together. I knew the competition would be very close when it came down to deciding the winner. Feeling very confident about our product, I was hoping we were in the top two with the group that made cashew butter chicken lettuce wraps. This just so happened to be the results!
If I had more time to develop our product, I'm not sure if I would change it at all. We worked very hard to create a product that is not only low carbohydrate but low calorie. The flavor was the perfect balance between pumpkin and Betsy's peanut butter all while being creamy.

The Diabetic Friendly Pumpkin Peanut Butter Swirl Popsicle allow diabetics to take part in dessert or a healthy snack and not feel left out or worried about their sugar level. The simplicity of the recipe allows any person at home to confidently create the popsicles. Type 2 Diabetics are not the only consumers this recipe is exclusive to. The uniqueness of the pumpkin and peanut butter combination intrigues almost anyone. It is a rare combination but packs so much flavor. Several of my friends are excited to try this in their own homes.  

To market this tasty treat, I would contact several big blog authors to test the recipe and blog about it. Personal experience with the product attracts more of an emotional side of the consumers.  The bloggers can give their personal opinions and tricks when creating the product. Another marketing option I would try to achieve would be contacting the American Diabetes Association to see if they would put the recipe on the website. Looking through their website, only one popsicle recipe is given and I feel the Pumpkin Peanut Butter Swirl Popsicles would be a great addition to the dessert recipes. I would also work with the local hospitals and diabetes education centers to promote the product. Being diabetic doesn't mean life can't be sweet or as delicious as it was. The popsicles offer the perfect amount feel satisfied when eating a snack or dessert.

Looking back at the competition, there are several recipes I can see myself incorporating into my diet or atleast trying once or twice at home. A recipe I plan on using was the gluten free protein bars. I am a huge advocate for breakfast on the go and these bars are perfect for me. They were high in protein and were a good texture for an early morning power bar. The nutrient dense bar can help me move on through the day. I may make them into bite size and take as afternoon snacks.


I have thoroughly enjoyed working with Betsy's Best throughout the semester and am very proud of all the hard work my group put into our final product.
